Ratatouille

I used just whatever I had in the fridge - it's a good way to use up vegetables quickly and simply and you can use any selection you like - whatever colour peppers, and whatever quantities takes your fancy.


Ingredients:
2 courgettes
1 aubergine
1 red pepper
1 red onion
1 white onion
garlic
basil
oregano
pepper

Chop the vegetables

Heat a little coconut oil and fry the onions and garlic until softened.

Add the vegetables and herbs, reduce heat and simmer for about 30 minutes or until softened.


Simple!
