Ingredients: 2 mangoes 1 cucumber 4 scallions 1 red chilli pepper 1 lime mint (fresh if you have it...I used dried stuff here) olive oil |
Peel and dice the mangoes. |
Peel and dice the cucumber to the same size. Combine them in a bowl. |
Finely chop the scallions and chilli. |
Juice the lime. |
Combine the mango and cucumber with the chilli, scallions and mint. |
Pour over the lime juice. |
Pour over a little olive oil too and stir well. |
Nice and fresh. |
