| Ingredients: 2 mangoes 1 cucumber 4 scallions 1 red chilli pepper 1 lime mint (fresh if you have it...I used dried stuff here) olive oil |

| Peel and dice the mangoes. |

| Peel and dice the cucumber to the same size. Combine them in a bowl. |

| Finely chop the scallions and chilli. |

| Juice the lime. |

| Combine the mango and cucumber with the chilli, scallions and mint. |

| Pour over the lime juice. |

| Pour over a little olive oil too and stir well. |

| Nice and fresh. |
