Cream of broccoli soup

2 heads of broccoli (about 800-1000g)
1 carrot, thinly sliced
1 onion chopped
coconut oil
1 can coconut milk
1L chicken stock

Heat the coconut oil and add the onion. Fry for a minute, then add the carrot and fry another couple of minutes, until they're beginning to soften.

Add the brocolli, broken into stalks, and the chicken stock. Add more water if you need to, to cover the veg.
Bring to boil, then reduce heat and simmer until veg is tender.

Remove veg to food processor and purée until smooth.
Then return to the remaining stock and stir well.
Reheat before serving!
