2 heads of broccoli (about 800-1000g)
1 carrot, thinly sliced
1 onion chopped
1 can coconut milk
1L chicken stock
|Heat the coconut oil and add the onion. Fry for a minute, then add the carrot and fry another couple of minutes, until they're beginning to soften.|
|Add the brocolli, broken into stalks, and the chicken stock. Add more water if you need to, to cover the veg.|
Bring to boil, then reduce heat and simmer until veg is tender.
|Remove veg to food processor and purée until smooth. |
Then return to the remaining stock and stir well.
|Reheat before serving!|
