|Mince the garlic|
Remove the outer leaves from the lamon grass, and bash it a few times to release the flavour, then chop.
|Grate the zest of the citrus fruits and juice them.|
Place the chicken in a baking tray, and pour over the juice, zest, chopped garlic and lemongrass.
|Roughly chop the scallions and place in the baking tray.|
Pour over the coconut milk.
|Bake in preheated oven at 180C for about 25-30 minutes.|
