Ingredients:
Chicken breasts
scallions
lemongrass
coconut milk
garlic
orange
lemon
lime

Mince the garlic
Remove the outer leaves from the lamon grass, and bash it a few times to release the flavour, then chop.

Grate the zest of the citrus fruits and juice them.
Place the chicken in a baking tray, and pour over the juice, zest, chopped garlic and lemongrass.

Roughly chop the scallions and place in the baking tray.
Pour over the coconut milk.

Bake in preheated oven at 180C for about 25-30 minutes.

Serve!
