Ingredients: Chicken breasts scallions lemongrass coconut milk garlic orange lemon lime |
Mince the garlic Remove the outer leaves from the lamon grass, and bash it a few times to release the flavour, then chop. |
Grate the zest of the citrus fruits and juice them. Place the chicken in a baking tray, and pour over the juice, zest, chopped garlic and lemongrass. |
Roughly chop the scallions and place in the baking tray. Pour over the coconut milk. |
Bake in preheated oven at 180C for about 25-30 minutes. |
Serve! |
